I love cucumbers but I don’t eat them enough, so my goal is to change that. Cucumbers are packed with water to keep you hydrated and loaded with vitamins. Their high water and fiber content makes them perfect for digestion and weight management. Plus, they’re incredibly versatile – you can toss them in salads, blend them into smoothies, or use them as a side for a savory dish.
What I love about cucumbers is how they add a satisfying crunch while being low in calories. (You don’t have to track your cucumber intake!). As someone who’s always looking for ways to eat healthy without sacrificing joy, I found some new recipes I think you’ll enjoy. All of these are healthy, refreshing, and easy to make!

Quinoa and Cucumber Noodles
2 cups cucumber, spiralized or julienned
2 cups chopped tomatoes
2 large avocados, diced
1 red onion, sliced
2 cups cooked quinoa
1 handful chopped parsley (or cilantro)
For the dressing:
1 ripe avocado
1/4 cup white wine vinegar
Juice of one lime
Salt and fresh cracked pepper, to taste
3/4 cup olive oil

Cucumber Lime Mocktail
1 cup of water
2 limes
3 tbsp mint leaves
2 tbsp maple syrup
pinch of salt
1 cup carbonated mineral water
2 cups of ice cubes
Cucumber Tuna Salad Bites
- 5 oz can chunk light tuna in water, drained well
- 2 tsp minced red onion, soaked in cold water for 5 minutes, then drained and rinsed
- 1 Tbsp minced celery
- 1 Tbsp minced dill
- 1/4 C mayo
- 1/2 tsp fresh lemon juice
- 1/8 tsp black pepper
- 2 cucumbers with slices down the sides
- 3 grape tomatoes sliced into quarters

If you don’t like tuna, use something else because the presentation of this dish is a winner.
