It’s Sunday, Day 7 of the 21 day Fitness Challenge. It’s an easy nutrition assignment to prepare you for the week ahead.


Day 7: Eat food for your soul

1. Eat 4 cups of vegetables.

Don’t eyeball it. Measure each serving to ensure you hit 4 cups. You can complete this mission in one sitting by eating the world’s largest salad or you can spread it out. For example, you could make a spinach omelette for breakfast, eat a salad for lunch, then enjoy a side of cauliflower with dinner. All vegetables are game. Be creative and colorful. Give your body what it needs. Feed your soul, baby.

It says a lot about what I learned after last year’s challenge that the two nutrition challenges I’ve done so far have been easy for me! Had no problem laying off the carbs for dinner last night and only eating protein and veggies (roasted carrots and sprouts). Today I had a green smoothie for breakfast with 2 cups of kale, a cup of brussel sprouts at lunch and a cup of carrots at dinner. However, I am drinking a beer now. Some things are sacred. 🙂 (Why did I just tell on myself???)

Finally done … I had a green smoothie for breakfast with 2 cups of spinach, for lunch and dinner I had a cup of broccoli.

I had the worlds largest salad. Two cups of spinach, two cups of watercress and a bunch of other tasty toppings like onions, chickpeas, apples and cheese.

We had a TON of veggies today. We got a day behind but doubled up on the workout and nutrition. All caught up now.

After your body ride yesterday and Chris/Ingrid/Alex’s bootcamp today I’m exhausted! And ravenously ate the largest salad of my life. Pretty sure I bought Whole Foods out of lettuce.

Starting the morning off with a big ole egg white omelet with 2.5 cups of mushrooms, bell peppers, asparagus, and cherry tomatoes
